Mike Lorentz
Mike Lorentz is the CEO and owner of Lorentz Meats, a small meat processing company in Cannon Falls, Minnesota. In operation since 1968, Lorentz plays a key role in supporting brands of niche meat products from family-owned and sustainability-minded ranches and farms in the region surrounding Southeast Minnesota. Lorentz Meats runs the gamut from slaughter to processing of fully cooked meat products and handles a range of animal species including specialty breeds of pork as well as bison, beef and others. Their products are typically sold to retailers ranging from local coops to Costco, to food service accounts ranging from restaurants to large distributors like US Foods and institutional service providers including Bon Appétit and Sodexo. As an expert in small scale specialty meat processing and marketing, Mike has taken an active role in developing the small scale meat processing industry, focusing on bringing local and regionally raised meats to market in order to support the success of local ranchers and Farmers. In 2012 Lorentz partnered with Organic Meat Company to expand the Cannon falls facility from 10,000 square feet to 30,000. In June of 2014 Lorentz Meats partnered with Arion Thiboumery and opened Vermont Packinghouse in North Springfield Vt. This facility will continue the tradition of transparency and sustainability started in MN for farmers and customers in the north east.
